What year truck? That "huge stock silencer" is prolly a resonator, you could take it off yourself without swapping mufflers and see if that makes a tone difference. If your gonna go from single to dual outlet, then run 3 inch in dual 2.5 inch out. Least on my 07 its 3 inch.

I am running a magnaflow on mine, good tone but a bit overbearing in the cab for me. I had duals out from the muffler and it cost me 250.00.

What model truck? 1500? or 2500? the 1500s i belive still have the MDS installed... and if so.... you may want to just swap the mufflers.... I put a Magnaflow Single in and single out... sounds good at an idle.. great on take offs... but crusing kinda sounds crappy....

Wow, $700 for a catback is way too high, I had true duals put on my truck for like $400....Go to a local exhaust shop and tell them what you want done, If you just want a singlecatback it should be around$200 depending what muffler you go with. If you want loud check out the aero turbine 3030, also some people like the cherry bomb mufflers for loudness.
