+1 for duct tape. I used to cover everything in duct tape, overlapping as I went. When done, pull off the giant attached piece, and all the hair comes with it.

I have the stock cloth seats so if the truck gets over flowing with dog hair I use Duct tape .wrap it around your hand upside down and go nuts. It also helps to groom the dog once in a while.
