I think ceramic b/c it keeps the heat in tubes better, w/ stainless it will radiate more into the engine bay. It may not be a big deal w/ shorty headers whether or not they are coated, but even the stock manifolds have heatshields. I've also read that the best gaskets to use are the mopar one's. If you go through w/ it make sure you let us know how it turns out.
