Theres a couple threads about it here already and supposedly theres a key trick to turning it off on the 4X4s. Mostly in the 4th Gen section though. Have you tried any of these techniques? I know they arent Ram specific but it may help point you in the right direction.

Its traction control, its another way for Dodge to prevent you from having fun.
I used to have a charger and if you turn the key to ignition (cranked all the way) when the truck is rolling at 30 mph and hold it for 3-5 seconds, it would turn it off. I dont know if that works with a ram though

Im sure theres a loop hole like that for the ram. A guy i know had a f-150 and once he hit the speed limiter he turned the key to START 3 times and watched the speedometer climb some more!!!
