If it were me with this high mileage (and I have done this already), I'd drop the pan replace the filters and then top back up. Usually 7-8 quarts will do.
If you want you can do that first, then as a more thorough service, disconect the return line from the cooler back to the transmission and fire the truck up.
Put the line into a bucket and let the tranny pump out the remainder that was left in the torque converter. Top up with fresh fluid while it's doing this and calculate how much you had from the pan drop minus the capacity of the transmission. That will tell you how much to pump out and top up by.
