IF IT WOULD BE A BAD OR GOOD IDEA TO GUT MY CATS ON MY HEMI. AND IF I DID, WHAT COULD I DO TO KEEP THE O2 SENSORS FROM THROWING A CODE? WOULD IT BE A BAD IDEA TO JUST LEAVE THE CATS GUTTED AND THE CODE ON? ID APPRECIATE THE HELP...
First and foremost, turn the caps off please. Some people consider it rude to type is all caps. The first thing I need to ask though is being in TX, do you go through emission tests or visual checks?
As for tricking the O2's, you can either get custom tuned and tune them out or use non-foulers to trick them. There are lots of threads on this and even a DIY in the FAQs at the top of this section.

Whoa, this place has changed a lot in the last couple of years. It used to be any thread even mentioning bypassing emissions would get locked down or deleted.
It's a Federal offense to tamper with your emissions control equipment - meaning it's against the law. The fine, last I checked, was somewhere around $10k.
Cats aren't a big restriction these days, it's not like the 1970s. Leaving them alone won't hurt performance much at all.
However, if you want to gut them, and you don't have emissions testing, then you can do a couple of things - spark plug anti-foulers, O2 simulators, and resistors are three different methods that are relatively inexpensive that may or may not eliminate the CEL. YMMV.
