I smelled my cats for the first time ever tonight... Ran her real hard on the way home from the bar. Wot up a rediculous grade @ 50mph. The literal road name is "breakneck road" lol. Hope I don't have an issue

I'm leaning hard torwards it being a problem with your Cat. Next time you drive it, when you get home, don't turn off the engine, put the truck in park, get out and look under your truck at the Cat. If it's glowing red (even just a little), you got a problem with it. One solution will turn on your check engine light but works.
Disconnect the exhaust as close to the cat as possible and push it out of the way. Start the truck and wait till the engine is warm, then turn the truck off. (BTW...park on a hill facing up the hill). Take your garden hose and spray it inside your cat. All the mesh inside will shatter and run out. It will solve the driveability issue but will turn on the check engine light until you change out the cat.
