Default "Sabotaged" 5.7 hemi

Hey guys, I've got a fun one for ya!

I bought myself an issue, a 2004 QCSB 2500 5.7 5-spd 4wd.
I don't regret it one bit!
The previous owner said the truck ran fine at one point, and that when he bought it somebody else sabotaged the engine to make it run like crap because he had wanted to buy it.
so, supposedly my issue should be a human inflicted one, and thus easy to resolve, right? Haha.

So, it has plenty of issues (doesn't any used vehicle?) -mainly that it wants to stay in limp mode (won't rev past 2500).
The throttle limiting in addition to the blinking lightning bolt in the bottom right corner of the dash and barely alive idle (500), with occasional stalling, has led me to believe that something has been played with in the throttle / pedal area.

Now, I'm not sure if this is related, but I believe I read somewhere that a guy had his thermostat short out and cause a limp mode situation, and my thermostat just happens to be doing absolutely nothing right now, my gauge is resting all the way to the left.

To add to the mystery, this issue has come and gone, I started it up to move it the other day and for about 5 minutes of driving it allowed me to rev all the way up and drive without issue.
However the first corner I took left it back in limp mode, maybe a cut wire?

Anyways, just hoping for some input from anybody who may have an idea of where to start and what to look for.

Thermostats don't "short out" lol, they aren't electronic. Just opens or closes based on temperature, all that can happen is that it stops doing that for some reason. Are there any codes?
