Default Coolant and temp issues

Hi all,
I’m new on here and was wondering if someone could help me with an issue I’m having with my 3rd gen 5.7
I just put a new thermostat in it as my truck was overheating. It now fluctuates between normal temps and moderately hot, and I only get hot air when it’s past operating temps. I think my heater hoses are leaking, but whenever I fill up my coolant overflow reservoir full after about ten minutes of driving it’s completely empty and I don’t think I’m burning any.
Very confused and just wondering if anyone could help me out

Get a pressure tester from Auto parts stores "loan a tool" program and see if you have a leak first.
