I just picked up an '03 Ram with the 3.7 and a 5 speed. I would like to put on a cat-back system and I'd like to get some feedback from anyone who has one on their V6. I don't expect it to sound like a hemi so I'm more interested in fit issues, where to buy it from, in addition to how it sounds.

Look at the V6 specific forum just above. You'll find some answers or post new. Here all the V8 and Hemi guys will just tell you "you should've bought a V8". Well not all of them, most guys are cool.

And yeah, I would love a V8 but I got an incredible deal on this truck and all I use it for is back and forth to work and hauling a couple mx bike around in.

I'd take a look at Magnaflow. I couldn't be happier with my setup, and they make some systems for the V6. Can't answer fit questions, sound, at least not on a V6. As for where to buy, if you go to their website you can do a dealer search.
