will these tires rub?

At 11.5" I think they will just go, I know you can get right at 12.5" on a torsion front 1500 with just a hair of a rub at 100% turn with the stock wheels and there is about a half inch less clearance on your coil over so I'd be surprised if there is any rub. If so, it'll be at extreme full turn so I don't know if I'd even mess with spacers, just cut the wheel till 95% turn. Going full lock is rough on our relatively cheasy racks anyway and should be avoided no matter what size tires you run.
I've got a good buddy of mine with an '03 1500 4x4 QCSB 4.7 who can't back his fishing boat worth a flip and is forever locking that thing at full turn and with only about 55k miles on it he's on his 3rd rack & pinion. I almost never turn mine all the way unless I absolutely have to, and my original rack is just fine (knock on wood)...

I thought some guys were running 305/50/20 on stockers without problems? is there something that I am missing?
I was planning on going with the 305/50/20's on my 07 when the crapyears are shot, and people have said that they are running that size with no problems
