3 car seats?
Your better off with the crew cab. I have the quad cab and you have to move the front seats forward and the recline position at a 90 degree to compensate for the car seat. This makes the front passenger sitting in the front uncomfortable. With the crew cab you have more depth so it shouldn't interfere with the front seats.
i have two car seats in my crew cab one for my 2ys old which is behind the passager and the carrying one that in the middle foe the 7m old
Yep, the RAM can handle 3 Latch car seats. The center one is narrow, but it's offset to the passenger side. So, make sure the center kid and the passenger kid get along because they'll be in easy "he touched me!" range.
The Crew vs. Quad really comes into play if you've got a rear facing child seat. As renos said, the rear facing seat sticks out far. In the Quad, if you've only got 1 rear facing and you've got the console up front, then you can stick the rear facing seat in the center and not have to make too many adjustments. However, if you have the bench front or multiple rear facing seats, then you're going to be sitting farther and more upright than typical seat positions.
In the Crew you get extra room and you'll only have to make slight adjustments for a rear facing seat. If you have the bench up front you won't notice the change at all really. If you've got the console and only 1 rear facing seat, put in the middle and you don't have to adjust at all.
If none of your seats are rear facing, then either cab will work. Just keep in mind though the Quad back is a lot shorter and depending on your kid's size, the back of the seats will be in easy kicking range by the kids.
My suggestion is take a seat or two with you to the dealer. Any salesman worth dealing with will be more than happy to help you install them into both a Quad and a Crew so that you can see for yourself.

I've got three in my CC all forward facing. I found it too difficult to use the tether attachment for the top so I only used the lower latch points. My oldest is now in a booster cushion only and my middle is now is the booster seat both using the seat belts. They often have a hard time getting their seat belts buckled because of the tight space between the seats. I wouldn't recommend the Quad unless you enjoy them kicking your seat constantly.

Like the others said, three in the back is no problem. The only crappy thing about the car seats is the below seat storage in the back becomes obsolete. No way you would want to take the seat out every time you want to access the storage. I guess it's one of the sacrifices a dad has to make....
