Adding a cooler thermostat does not make the engine more efficient. According to Thermodynamic laws and the Otto cycle a hotter burning engine is more efficient at producing power. Most people put on lower rated thermostats because they live in hotter areas and during the summer the engine temps can get pretty high which can in turn shorten the life of the engine.
