I just picked up my 2000 Dodge Dakota SLT a few days ago, and I've got a temporary set up in the truck right now (couldn't take the tape player anymore).

Current set up
-Kenwood KDC-MP638U w/ iPod integration
-Kenwood 1000w 2/1 channel amp
-10" Alpine Type E in a sealed box

So nothing amazing yet, but here's the plan;

Pioneer f-900BT Double Din Navigation/DVD/Bluetooth
Infinity Kappa 6.5" Components for the front doors
Infinity Kappa 6.5" Coaxials for the rear side panels
Rockford Fosgate P400.4 4 channel amplifier
Rockford Fosgate P500.2 2/1 channel amplifier
Rockford Fosgate 1 Farad Digital Capacitor
Custom box under rear jump seat (replacing tool tray)
2 10" Infinity Kappa subwoofers

Pics to come of current set up soon

The Infinity's... Will those be the Infinity Kappa Perfect 10.1's? I highly recommend those to anyone. Those subs are simply amazing!!

I'll have to take some measurments. I'd love to go with the dual 4ohm perfects, but the deciding factor for the subs will be how much clearance there is. Essentially I'd like to keep the rear seat for storage purposes. I've tossed around the idea of removing the jump seat and rear pad all together and doing one of two setups.

Setup 1:
-1 15" Rockford Fosgate T2 subwoofer
-2 10" Rockford Fosgate P3 10" subwoofers
-Rockford Fosgate P1000.1 to run the T2
-Rockford Fosgate P500.2 to run the P3's
-Rockford Fosgate P400.4 to power doors & rear panel speakers

Setup 2:
-2 10" Alpine Type R Subs
-Alpine 1000w monoblock to power subs
-Alpine 4ch for door & panel speakers

Obviously the Alpine system will be much more cost efficient, but being the senior audio technician (Best Buy) and I'm the highest certified tech in my county, it's kinda expected that I have something a little out of the ordinary in my vehicle. I guess it'll all come down to how much this tax return is and what I can find. Since Circuit City is going out of business, I might try to snag some deals there but most likely it'll be all stuff that I can get through the store or through the company accomodations.
