Default Overheating issues!!! Help please :)

Hello,

Ok so yesterday on my way home from work i noticed that the thermostat was at about 75%. In which it is usually at 55%. It started to shoot up to about 90% and that is when i turned my heater on and then it went back down. After about 3 miles it slowly started to go up again. After stopping at a gas station and looking at the antifreeze i noticed that there wasn't much if any. I put almost a full gallon or container in and it didn't seem to help. I drove another 2 miles with it going up and down in which i met up with a friend. After about 3 hours i ended up going home. The thermostat did not go above 40%. I have never seen it that low and on my way to work today the same thing. Not above 40%. Could it be that the coolant has just been too low. I replaced the water pump not too long ago, i would say maybe two to three months ago. Thank you for the comments in advance.

It is a 2000. What is weird, is that it is not overheating at all now.

Have to wait for the coolant to get low again. Also make sure the fins in the radiator aren't all corroded
