[4th Gen : 01-07]: GC revving while idle (and other fun issues)

I bought a used 2004 GC nearly 3 years ago and it has been amazing. A few small issues with windows, lights, and general maintenance... but all in all, it's been amazing. No transmission rebuilt yet at 102k miles (or 163k km).
I took a 2500km roadtrip in the summer, and upon arriving back home, things started getting a bit weird.
1. When starting, it often revs/falters for 5 - 10 seconds before 'stabilizing'.
2. If I shift into drive too quickly (before it 'stabilizes'), the car will stall or jolt around for a moment or two.
3. I currently have a check engine light on, which is p0456. A new gas cap and code reset made it go away for ~3 weeks, but it's back again.
4. It just occasionally sounds different than it used to before that summer roadtrip. The engine sounds louder than it used to.
5. It may be unrelated, but it's around this time that my headlights started to do weird things. When I autostart the car, the headlights flicker on an off intermittently. There is no pattern to it, it's seemingly random. It goes away when I start driving. I noticed other electrical gremlins when the passenger-side sliding door is open; the 'door open!' beep goes off multiple times.
That's the big issue I'm trying to solve. Any idea? From what I've researched, it may be an issue with the idle air control or it could be a bigger leak in the EVAP system somewhere. I'm not mechanically inclined, but my father is, and your advice here will help me sort out what to try next.

BONUS ISSUES THAT I CAN LIVE WITH:
1. 6 months after I bought it, it stopped starting with keys. If I use a key, it stalls. The autostart the previous owner installed works fine though.
2. 50% of the time, there's a loud squeal when starting it up, then it catches. I think it's the power steering, because I can't steer until the squeal goes away, then it's fine.
3. Driver side power window has died twice. Once I smacked the motor with a hammer and it worked for a year, but it's broken again. It's broken again and I haven't re-opened the door to try the hammer fix because I can't track down the rivet for replacements.

One more potentially important symptom of the idling issue is that the spedometer bounces from 0kmph -> 60kmph while the idling is acting up. It settles afterwards. I understand the tachometer would bounce while it sputters, but the spedometer too? Maybe that's just a side effect of the other mechanical gremlins (like the flashing headlights).
What's the most efficient way to address p0456? I'm sure the dealer could sort out if there is a leak or not, but is there an easy way to do it from home? We've already replaced the gas cap and solenoid but no dice. I'm hoping it's a leak we can catch and fix on our own and that it'll fix the key issue here; the sputtering on start.
