Default What are chips / programmer actually doing?

What exactly is each performance "chip" or programmer doing to get the added performance? I have seen some called boost foolers, know that others change the fuel injection and timing. It would be nice to know exactly what each of the different brands is actually doing to get the added performance.

Also, when altering the factory setup, is there anthing that you need to worry about and a what point should you start monitering exhaust temp and other things?
