the the thermostat on my 12 valve keeps going from 160 degrees to 225 back and forth fast.

 

yeah, mine does this too! I haven't yet checked it out, but my brother suggests that it might be due to a fan clutch that has locked up. If you check yours out and find that it is the case, let me know. His suggestion makes good sense
