Got this read out after a fill up, the truck is an 08 2500 turbo diesel, with almost 17K miles. My husband wanted to test it out but I chickened out at 453 miles all highway miles across MO ...it reset to 512 once I filled it back up. Could this have been right?

The computer calculates the miles to empty according to how the truck is being used at that second. So if you are idling and hit the reset button, it will calculate that if you continue this trend, you can get xxx miles out of it. Does that make sense. Try resetting it as you are running the truck pretty hard and see what it says.
