Default Clutch trouble.

1998 Dodge 3500
The clutch jerks and chatters on start-up when in 1st and reverse. Have replaced clutch and pressure plate, new fly wheel, new Hyd slave cylinder. This truck has had a new transmission and have replaced motor mounts. This is a work truck and has had several clutches installed. Every clutch does the same thing.
Any ideas on the clutch problem?

Where are you buying your clutches? There is no such thing as a good cheap clutch. If you are buying them at Autozone or some place like that, then that is your problem. My truck did exactly as you described after putting 800 miles on a cheap clutch. I put on a South Bend clutch, problem solved. I was fortunate to get my money back for the el cheapo clutch, but still had to pay the mechanic another $200 to put the SB clutch on.

If you call South Bend Cluth (South Bend Indiana) and tell them the truck, what you tow, how you drive, mods you've made to the truck, etc. They will get you the right clutch.
