I know about the mold and mildew, although I never experienced it. Do you know about any negatives of using foam insulation?

It depends which one you use. The rigid stuff is just that, rigid. But, like anything else, I can be done. There is new spray stuff I saw on HomeTime that I think would work well, if you have the room to spray.
Some foam is fire resistant, but some will catch fire. So that is another consideration.
My Elk Conversion is actually filled with fiberglass insulation. That may be the better solution.
