Thanks alloro, guess i'm still just used to seeing the temps lower from the previous 180 thermostat. Not that it's needed now but the heater runs good now too where it didn't before all this.
I did end up going through most of the lower and front evap system vacuum lines today with carb cleaner with no sign of leak, doesn't mean there isn't one but I tried. Pulled some lines around the canister which were easier than expected and reset them, some of the T's and plastic couplers between lines were fused on it seemed so left them alone. Only place I didn't spray was around the intake and the map sensor, ran out of carb cleaner so will hit that when i get more. Still going to try out that fog machine when it comes just to see what comes of it. Thinking it's time to quit procrastinating and clean up that throttle body too and take a peek at whats underneath

Thought I'd drag this one up again so's not to leave it as another dead end...
Been working pretty steady lately so no real update as to finding a vacuum leak but I had read from another post i think it was in 2nd gen trucks that the guy had dialed the temp **** over to heat, you can hear the vent switch over, then dial back over to cold but stopped just a couple notches short of full on cold and this resolved the vents from switching to defrost, then floor when accelerating or going uphill.
I tried this method and it works in my case too, haven't had any problem since last posting here on this issue. I don't know the answer to the problem but it's nice to not have to back off the accelerator a couple times to adjust the vents back to dash.

Yep, its been my experience that the climate controls are sticky and imprecise on Dodge trucks/vans.
Recommend switching these ***** very slowly and cautiously. If it won't quite go into the setting, pull it off and check the back: these ***** are infamous for cracking/breaking off. All of mine were cracked when I bought my van. Good news is they are cheap/easy to replace because the same **** is used on Jeep and probably other Chrysler variants. Hit me up if you can't find them as they are readily available for $5/apiece.
