Default Engine cutting out on overrun

Hi everyone I have a fault on my 1991 Dodge ram van B250 with a 3.9 V6 in it which is driving me crazy. It starts from cold or hot with no issues, drives great but when coasting down a hill or foot off the gas it sounds like it is flooding and eventually cuts out. I have replaced the Temperature sensor, Idle speed control valve and the throttle position switch but the fault is still there. It is exactly like when you pull out the choke when an engine is hot and the engine chokes itself but this being fuel injection has baffled me. It's quite dangerous when turning a corner when the motor cuts out as loosing steering etc is a nightmare.

Just to mention as well the Cat has been removed and the air pump as over here in the UK under 1992 we don't need a Cat fitted, I have also fitted 2 NEW exhaust manifoilds recently plus the EGR has been capped off feeding the 3 emission solenoids.

Any ideas would be most appreciated thanks.
