Default 1995 3500 5.7 gas engine stalling

I have a 3500 4x4 mason dump. Have an intermitent problem with the engine shuting down when plowing. usually when making K turns and running in reverse alot. The temp gauge reads normal but many time if smell hot coolant when this happens. I've changed the Tstat and flushed the antifreeze. I confirmed the guage does work. The engine sits for 15 min. then it turns over. It has never actually overheated. Last night some drunken driver ramed head on into my plow and the truck stalled. It started up but now the problem happens much more frequently?? Anyone have any suggestions.

1st thought would be the throttle body needs to be cleaned... is this a 360 motor? The dirty TB will cause stalling usually when your at a stop but will not when your on the gas driving. Also the check engine light will not come on.
