I've got a 96 3/4 ton 4x4 5 spd pickup and am wondering what exactly are all my options on using the pto output shaft on the side of the transmission. Winches, hydraulic pump, air compressors, etc... Can anyone give me more information on what to do with it and where to buy parts and installation instructions, etc...

you can use that pto shaft for any purpose you see fit, as for getting parts there are really only two different pto's there is a 540 rpm and a 1100 rpm. the only difference is the number of splines on the output shaft, you can probably find the necessary shafts and couplers at any tractor dealership or machine shop
