i was owondering if $700 odd dollars was a good deal for an edelbrock air cleaner, intake manifold, carb, fuel line, and valve covers

it depends what model intake, what type and model carb...

Edelbrock is a fairly inexpensive brand and their air cleaner, valve covers and fuel line are all easily had for less than $100 total. The rest depends on what size, type and version the intake and carb are, but it is highly unlikely that they total $600 or more in which case you could just go buy them brand new.
