Currently working on a LeBaron for someone, motor is junk (sat for 4 years with bad head gaskets and coolant sitting in cylinders) and I'm trying to find a replacement that won't cost $1500. I ran onto a Caravan with a good 3.8 and tranny for $500. Will it bolt in, and how much trouble am I going to have doing the job (fab work, custom wiring, etc)? I'm not interested in a 2-week long project, but don't mind doing it if I can have it done in a few days of steady work.

If you want to try something unique, go ahead and try it, this link discusses this. There are enough 3.0L V6 Daytonas in the world, the Daytona deserves a Chrysler powertrain instead of a lame Mitsubishi. Go ahead and try it.
