Default What happens to the O2 when you go cat delete?

What happens to the O2 readings when you go with a cat delete pipe? Do you just get an engine light and ignore it or does it not create a problem. I do not even know at this time if the car has an upstream and downstream sensor. Does it have one or two?
Does it create a driveability problem? Seems it would. How do you get around this?

if you have s0 it will throw a code. the stage ecu's do not use the second o2 sensor so there is no code.

When I deleted my cat, there was already an 02 bung welded into the pipe. So though I didn't use it it was still theren nonetheless. Im also Stage 1.
