Plug in with a scanner that can read live data, and see what temp the PCM thinks the engine is.

On the 8.0, there is a seal that goes down inside the hole for the thermostat, if it isn't there, the thermostat isn't really doing anything.

The temp gauge in mine just ain't that accurate.... In fact, it is SO inaccurate, I actually changed the thermostat, because I thought the engine was running too cold, only to find.... Temp was correct.... and I didn't need to change the stat. I figgered it out AFTER I had changed it, the gauge was in the same place, and my scanner told me the engine was at 195...... Shoulda done that FIRST.

Somebody didn't put a Failsafe thermostat in it did they? Get a remote infrared thermometer and warm the engine up.Read the metal part on top of the thermostat. If it' reading cold, 120-130 is as much as they will warm up when failed, If the thermometer is reading 185 or more, it's not failed, you have an issue with your gauge.
