Things that affect temperature :
Thermostat
Radiator cap
Proper coolant
Water pump

I'd replace the first two , then flush radiator and add new coolant

the sensor that turns on the fan is the same as the coolant sensor? where is it located?

the thermostat is changed and the coolant flushed too, not sure abt the water pump but no leaks anywhere at all though.

The coolant sensor = Temp gauge sensor .... I'm assuming it's working OK but if you really feel the need to change it go ahead ...

Just a shot in the dark here. Are you having to add coolant frequently? I have a leak that I recently found to be a leaking water pump.If not have you burped your radiator? My guage does the same thing yours does but usually when I am running low on coolant. Food for thought.
