can you drive with out one and be safe

Ya 95_318SLT did. He says the body roll is not bad. And he said it gave it a little more lift too.

Yup, what they said.

But seriously, don't take it off unless you're planning to crank the torsion bars up. The body roll in mine is not bad only because the torsion bars have such a high spring rate right now. I would imagine that if you removed the sway bar with the torsion bars at their factory spring rate, that it would body roll a lot worse.
