The quick version of how a hydraulic transmission works is you have a governor valve that increases pressure as the transmission spins faster, and a throttle valve that fights the governor valve. When the governor valve has enough pressure to overcome the throttle valve, the transmission shifts. The throttle valve increases pressure as you step on the gas via that TV cable, and the more pressure it builds, the more it can fight the governor valve, and the faster the transmission can go before it shifts.
