How would one go about doing this to their door panels? are there any other options to re-carpeting rather than buying a carpet kit?

You can buy universal carpet and custom fit it. As well as buying upholstery that you can do what ever you want with. Just get some upholstery spray and glue them on.

You could buy the cardboard base and build it up with some carpet and staples and glue.

Yeah. Its like a thick cardboard. The early model cars used to use that method. Until auto makers decided to make everything out of molded plastic.

I have seen what you're talking about but how would you get it to be the same as the dakota panels, and also the clips our trucks use wouldn't work with that material one good bash would cause a crack or break. It looks like that guy used an adhesive and just stuck the fabrick over the plastic. Pretty good idea!
