Default Car looses acceleration and sputters when I turn the AC on

I have a 95 dodge dakota v8 auto with the 318 motor.

Just had tranny replaced, 1 of 8 injectors, spark plugs and spark plug wires replaced. Running really nice for 3 months after sitting for 3 weeks.
It has been running great until I turned the AC on last friday. Decelerated to about 30-45mph and sputtered a little bit. Idle's pretty smooth then gets shaky.

From reading online someone mentined it could be the AIC sensor or O2 sensor. I disconnected the battery terminals and turned light switch on to drain any electrical items over the weekend. Reconnected battery and cranked right up. Ran really smooth at 70mph on interstate for 20 mins then went back to deceleration. pulled off interstate and drove decent as long as I was under 30 mph on regular roads just to get to the office.

I am handy enough to replace anything electrical or sensor related so I am hoping it will be something like that. Any helpful hints or insight I might be missing. No check engine light so I dont know if it is throwing a code or not.

There are codes that do not set off the light. Try reading the codes. The FAQ has a good right up on how to do it just by turning on and off the key and reading the flashes, as well as what the codes are.
