aftermarket coolant temp gauge

Well ive decided im going to try and snag a taurus or volvo 2 speed fan and do the volvo controller/relay.

My question is what temp should i run for my temperature switch. I run a 180 t-stat in the summer and usually swap back to a 195 t-stat in the winter (helps with getting better heat lol).

I would like to find something with a dual temperature switch (to utilize high and low) what temperature range should i look for? I found this in a different thread

Solution = BMW 91 / 99* C (180/195*F) dual temp switch Part # 61311378073< $11 from Rock Auto - can't beat that.
One single temp switch instead of 2, just gotta drill and tap a brass adapter fitting to accept the M14 x1.5 thread.

But that would leave my fans kicking on the moment the t-stat opened which isnt always necessary in my book. I could be wrong but if im running a 180 t-stat wouldnt i want the low side to kick on about 190 and back off at about the 180 range?

Like i said my thinking could be wrong, then again if the new electric fan does a better job at keeping me cool i may not run the 180 tstat anymore. (currently im using a dual setup out of a grand caravan it works, but could work better)
