Default '96 dakota 6cyl...Temperature concerns

125k miles...water pump and all related parts (except the radiator oddly enough), has been replaced...The temp gauge now only hits the first slash of the cold mark (it had been hitting the mid point before the pump went). Has my mechanic installed the wrong thermostat, or could I have the wrong poundage on my radiator cap?
Any help would be appreciated, I'm trying to reaquaint myself with liquid cooled engines after having driven, rebuilt, driven and repaired aircooled VWs for the last ten years.... The reason I bought the truck was for the heat...and now it doesn't have much

Thanks in advance....

I think it uses a 16 lb cap, try a 180 degree thermostat, it worked great for me.
