I know on the first gen Dakota the rear end is off centered and the tire sticks out farther on the driver side than the passenger side Does anyone know how much so I can order a wheel spacer for that side to make them even

Actually, no, the tire isn't SUPPOSED to stick out; if it does, you've got an alignment problem with the springs.

So I'd have to say "zero".

The "pumkin" is off center, but the wheels are centered....... If your axle is off center, look for damage...... If you dont see it, consider a body shop to inspect and check for damage.

As 93_ragtop says, the pumpkin is off center - so that both sides use the same length axle.

HOWEVER.

The pumpkin isn't centered in the frame EITHER; but the axle is supposed to be centered in the frame.

Again, check the frame, check the spring shackles and mounts, check the spring pads on the rear end housing.
