I hope you installed the 7oz (I install 8oz) of Friction Modifier in it after you opened it up? If not drain and install and pray. Your issue could also be a bad U-joint.

As for the rebuild. It took me 2 days but I had to do a full clean out job and it was my first rebuild. Knowing what I know now and I have most all the tools it would be 1 day unless there was issues.
So a couple of things:
- No I did not add the modifier - I believe that is only for LSD - I am not confirmed to have LSD
- Not a bad Ujoint, they all feel tight, no play
- When I opened up the pumpkin, there wasn't any metal on the magnet, nothing on the bottom, just fluid. It looked really clean.
- If I am understanding this right, if it is an LSD and the clutch packs are gone making it work like an open diff - I still should be able to raise an identify which diff I have because if it is an LSD, it should spin both wheels in the same direction.

if the clutch packs are bad there is a chance that jacking it up and turning the wheels will NOT work to confirm, it may well behave like an open diff, however not putting the friction modifier in it if you have limited slip will cause weird behavior even if the clutch packs are shot

if you are unsure the friction modifier in the diff oil is cheap insurance over a rear end rebuild IMHO

That's how my truck acted when my carrier bearings where shot, not saying thats what it is but just my 2 cents.

I pretty much had the same symptoms last year on my 2001. Turned out to be the rear u-joint; the needle bearings were basically powdered.
