Default Heads overmilled 4.7?

I recently rebuilt the top end of my 2000 dodge durango. I sent the cylinder heads to a fairly high rated machine shop in spokane. I've read that resurfacing the heads can cause some kind of timing issues, and I was hoping someone could go into more detail about it. My D sputters and spits on start up, and after choking for a moment, idles fine, but as soon as you press on the gas, she chokes again and dies.Anything helps, thank you for your time.

Surfacing the heads will move the cam gears lower, but, the chain is still the same length.... so, timing will be a bit 'off'. However, the amount taken off the heads is measured in thousandths of an inch, so, I don't really see that as having that much of an impact on how the engine should run. I would be tempted to re-verify the timing chains were properly installed, and the assorted timing marks all line up as they should. If that checks out, have a look at fuel pressure, and what your sensors are telling the PCM.
