From the picture,I would say down in back about 3".
A number of options:
Longer shackles and/or spring bracket flip.
Spring under setup(axle flip).
Have a set of rear springs made at a spring shop to your specs.
You can remove a small leaf or two,BUT you will need airbags and an axle locating setup(panhard bar,etc.)is recomended.

You should really also consider what you are going to use your truck for and how you are going to drive it. If its going to be a daily driver, year round, and you get snow and mud, you probably won't want to lower anything. Our back bumpers sort of act like a drag behind tractor plow when they touch the ground: it ain't pretty. But if it you don't have to worry about that, drop away!

The ones that you put in the coils, or below the coils? My understanding is that the ones that go in the coil are crap, and like to fall out and move around. But I haven't heard anybody complain about the ones that go below the spring.

No seriously, I thought you were looking to lower your truck. If you are trying to raise the front coils. A set of 2" lift coils are what you need. Lots of guys have mentioned those pieces you stick in the coils and said they are junk. Don't go there.
Here's a couple of places that make 2" lift coils for our trucks. Just shoot them an email and tell them what you need. I've read good things about both companies, Eaton Springs and Coil Spring Specialties.

The latest issue of Mopar Action has a good article on the project Scat dak Dakota. They had the rear leaf springs de-arched. Didn't say how much it cost, but they lost zero ride quality and zero towing\ hauling capacity. In the article, they used a strap to hold the rear end in place and had to remove nothing but the springs themselves.
