1988 d250 Temperature issue

Default 1988 d250 Temperature issue

I have installed a new motor in my old dodge.This time on the intake gaskets I used a coposite gasket without the coolant metering holes. I noticed I am running higher in temperature and fluctuating in temp.
My question is does any one know if it is because I didn't put in the coolant metering gaskets?
