Ummm a probably 31" rim minus the 1" for the tire... But if I've said this once on this topic I've said it a thousand times. Please NO!

It all really depends on what size rims you can find with our bolt pattern and what size tire you can find to go on it! Keep in mind that not all possible sizes are available. But once you find a set of wheels, here is how to determine what size tire to put on it...

The first number is the section width of the tire in millimeters. This is not the bead width nor the tread width, this is the width of the widest part of the tire.
The second number is the aspect ratio. This is a ratio of the height vs the width. This number as a percentage of the first number gives you the sidewall height.
The third number is the bead diameter (rim diameter) in inches.
*NOTE* 25.4 millimeters = 1 inch

Example) 235/75/15

Width = 235mm = 9.25". Height = 235*(75%) = 176.25mm = 6.94"
Total diameter = (6.94*2) + 15 = 28.88 inches
Converted to standard size, this is a 28.88 x 9.25 x 15 tire.

Uh, 26's are good... but real tires look better on a truck, plus they're cheaper.
