I just bought new Cooper S/T Maxx tires for my truck, 265/75/16 (32 inches). I have my torsion bars cranked all the way and they do rub a little bit. The 265/70/16 size tires don't have any rub

Why does this vary so much? Some people say it doesn't rub at all, some say it rubs a lot...

It all depends on how aggressive the tread is.

On mine, turning isn't an issue...if there's an obstacle blocking me, I'm more likely to drive over it then go around/go full lock/3 point turn.

Going over speedbumps/sharp jumps/bumps and such is a different story. Lets just say that sometimes I feel like a NASCAR crewman with the rubber mallet. I put V8 springs on it and those raised the nose an inch, helped alot.

I guess I'll have to get the smaller ones then since I do offroad and it flexes a lot on some trails

Then all you have to do is crank your torsion bars. With my 32's I couldnt get my truck to flex hard enough to get the tires to touch the fender(dumb ifs). The bump stops will come work before it even comes close to the fender.

Thats with 32x1150's. Only tire rub was on full lock which I usually only hit when back the trailer up.

Ya I've been hearing cranking them is hard on the whole front end though. And it will need an alignment ? The 265/75/16 is 31.7 inch so maybe it would work stock ?

It prob will be fine. There is a bunch of guys here that ran with cranked tb's never had a problem. I ran mine like that for over a year with off roading almost every weekend and never had a problem. I paid 53.00 to have a alignment done on mine.
