Default valve cover help

So I have started my plenum repair escapade and my engine is all taken apart and I'm currently working on cleaning the mating surfaces for the gaskets (plenum gasket was DESTROYED im not even sure how the truck was still running. I decided to do my valve cover gaskets too as they seemed leaky. My question is all my valve cover bolts are rusty and some of them pitted so I want to replace them. is there anywhere I can order a full set for cheap or do I have to go to a hardware store and if so what is the size and diameter of the bolts?

Also I just wanted to know the easiest way to clean the old crap that stuck on the engine (gasket mating surface for the plenum to the engine is covered in this hard textured crap from the old gasket.)

Thanks guys
