I would start by making it affordabale to drive... take the truck in and have the tech install a reducer on each muffler output so that it is not bigger than 2.25"... actually, i'd go 2" ~ 2.125". i'll bet you'll get some great low end gains which will help you get up to speed quicker and save you some $ at the pumps. the more you save at the pumps, the quicker you'll be able to do more mods...
the 1st mods I'd suggest are to fix the exhaust and put in a 180 t-stat (drill a real small hole in the diaphram prior to the install.

wow, I always assumed bigger exhaust was better(the exhaust was already installed when I bought it...)
So, what do you mean by reducer? like I need new piping all the way, or is it something u add the the exhaust tips?? I'd like to stay atleast 2.25" or if ya'll think 2" to 2.125" is better
whats a good price on a T-Stat?

you dont have to replace everything behind the muffler, they can install a reducer right behind it. all a muffler shop has to do is get a piece 2.0 or 2.25 or whatever size you decide on and open it up so it'll slide over the 2.5's on the muffler & existing tail pipe. they will have to cut a section out to do the install.
Unless your V6 is really built up already, which it doesnt sound like it is, doing this will help out your low end alot and make driving it daily alot easier on you. your top end will suffer some but your motor (assuming stock) cannot pump enough air thru it to make a huge difference in the top end. IMO...
go with 2.25" if you like, that's what I had on my 360/5.9 motor. that worked out good for my setup which was no where near stock.
t-stat's from napa are under $10 bux.

the t-stat will help regulate your motor temp... dropping it to a 180 will put it at a temp where it builds more power... emissions suffers slightly (will still pass smog) but you'll never notice it. you will notice the motor with slightly more power.
to keep 2.5"??? head work, intake, headers, high flow TB, high flow cat, cam, 1.6/1.7 roller rockers... etc...

not sure on teh price of those...ibut i did see that you said that you were going to lower it. if i were you i would go with a set of 2 inch drop springs with a 1 inch drop. it will give you tehbest look and its pretty cheap. prolly around a hundred. also i wouold go with using drop control arms up front. you can get all of this from stylin concepts. let me know how everything goes.
