A 180 degree thermostat will make your engine run cooler because it allows coolant to flow through the motor when the motor reaches a temp. of 180 degrees, as upposed to stock which is 195 iirc. The temp guage will just give you a reading on what the temp of the coolant is at the location where you mount the sensor.

The reason for the 180 t-stat is that a cooler engine will resist detonation better, meaning you can run more timing and pick up power and fuel efficiency. Dodge uses 195 t-stats from the factory because a hotter running engine will burn off emissions more completely, making it better for the sniffer test.
