Default Temperature gauge Problem

I recently had to bypass my Heating core due to it being bad. I replaced my Thermostat with a failsafe /thermostat about 3 weeks ago. Now in the last couple of days, I have watched my gauge stay in the cold area for a long time, after I've driven for at least 10 miles or more and then it moves up a little, It would go up to the middle line and then drop all the way down to the cold area on my guage. Some times it even just goes al,ost to the middle just or it to drop down. It fluctuate up and down, sometimes it just sits in the middle. I've checked the radiator and the fluid is to the top, and there is no leaks. Any information would be appreciated. Thank you.

What kind of thermostat is it? Did you get the correct degree thermostat as well?

Thank you for responding, hope your having a great Holiday. The one I got was from Autozone... Here is the info on it, Also now my car has the check engine light on. It came up on Christmas day.I'm going to see if I can get one of the auto parts store to let me borrow their OBD scan tool since alot of the repair places charge alot of money to check it.
