Question Reviving a thermostat?

So my car has been getting abnormally hot so I decided to check the coolant, it was fine, and boil my thermostat to see if it was working. I cycled it a few times from the boiling water to cold water. Here's the odd part: I went on a 2 mile round trip with a 20 minute break between driving and it got really hot. After I tested the thermostat I went on a 10 mile drive with varying speeds/engine speeds and it stayed cool like normal. What's up with that?

I don't have the money to replace the t-stat til tomorrow but I figured I'd do it this weekend. As for the head gasket, I'll deal with that when the time comes.. It'll be a while before I have the extra $300 to do it.
