Default HELP NEON 2005 Check Engine

I just changed my thermostat in my 2005 neon sxt and after about 300 miles the check engine light came on for the thermostat/ low coolant level. Coolant is proper and thermostat is new car is not over heating and oil is clean. the car still runs great just hear bubbling when i shut it off. What could be wrong and any solutions?

How's the gasket on the radiator cap?

Air in the system . Did u burp it? Thermostat in the correct 1 o' clock posision?

The gasket is fine even changed the radiator cap, and i tried burping the system but still nothing. Think it could be a bad coolant temperature sensor?

oh and i changed the oil and no coolant was found in the oil as well as no oil in the coolant tank
