The non-LT rated tire at 2403LB is their SUV tire. Will that matter?

No. As long as the load does not exceed the load capacity you will be fine.

I originally got the E rate Falken Wild Peak AT (same as Rocky Mountain). They look flat at the plackard PSI. I want to inflate them more but since I dont haul or tow, I think it would damage my suspension from what my friend told me. Not sure but I am returning them for the Coopers.

I do off road but rarely.
